Would you let a baker lecture you on baking if they didn't have a clue what 90% of the cake they're trying to sell was made up of.Considering that bread is largely (maybe not 90%) "air", and I know of few bakers that can tell you the difference between air and CO2 (even fewer that can tell you the biochemistry of wheat); the OP may want to choose a different analogy that doesn't disprove their point.
