EDK is the very ancient Intel EFI Development Kit. Some of that code goes back to 1999 or thereabouts.

The modern reference code is UDK2014 (UEFI Development Kit 2014)

For Windows guest - KVM or XEN and which distro for host?

btrfs with confidence? Good luck! btrfs on Linux is still at the early adopter stage. PCI passthrough is supported in KVM as is assigning a host USB to a guest.

Actually, no. The real bug is that efivars does not use QueryVariableInfo() (Section 7.2.2 UEFI Spec 2.3.1c) to check maximum size of storage for a variable. It simply assumes space is available.

There is one. It is called the Self Certification (SCT) for the UEFI Specification Version 2.3. It is available at http:://uefi.org.
