It is such a pain, we have 3rd parties working in our Jira Cloud instance, had to disable next gen projects because it was too easy to share it with every one.

On prem yes, but hosted in a customer selected data centre is what they are pushing customers to migrate to in that case, with the Jira Cloud version (with hosting completely controlled by Atlassian) what the article refers to.

It depends why you have that data

There are 6 options under Lawful Basis that you can Process data (storing data counts as processing). If you only have that data for marketing purposes you will need retrospective consent. If you need it for performance of a contract or you have a legitimate interest you should be fine.

Er, last time I checked Android had a bigger market share than iOS meaning that isn't really an advantage. Apple's vertical integration could be argued to be an advantage.
